Sunday Supper Club is back on 5th March! For our second edition we’ve invited very special guest chefs Will Stoyle and Ryan Walker from one of the city’s most unique and innovative restaurants, Silo. They’ll be serving up their famous Dreamerz Burgers keeping with the the ethos behind Silo “Fire, Fermentation and Fuck All Waste.”

Dreamerz Burgers is a new food concept brought to you from chefs Will Stoyle and Ryan Walker from Silo London, the world’s first zero waste restaurant. In keeping with the the ethos behind Silo, the tagline behind Dreamerz is “Fire, Fermentation and Fuck All Waste.” The brand creates a closed loop burger system, using produce from the dairy industry, as well as homemade ferments that have been brewing over the last few months, with all primary produce coming from small farms in the UK. For this very special menu, there will be two servings on offer: the cull burger, made from veal, and the vegan burger, made with buckwheat koji and mushroom duxelle. Root vegetables will be lacto fermented and smoked, to create a seasoning powder with leftover seaweed for the master wedges. This menu is inspired by the philosophy of no nutrient going to waste, pushing the chefs into unique and innovative cooking choices.
